Pro tips: Arch Deacon Skirt looks rad with a lot of Knight armors, has some poise, and can balance out your elemental resists.
If you're heavily devoted to Dex instead of Vit, then mix up some fashion out of all of the lighter ones. Exile, Cathedral, Gundyr, Faaram, Black Iron, and Winged sets have pretty superior resists and poise if you're a big boi.
A lot of good ones open up at the Firelink Handmaid after you kill an NPC invader.
